Filet mignon is French, after all, with filet meaning “thick slice” and mignon meaning “dainty.” Filet mignon comes from the small finish of the tenderloin (called the short loin) which is found on the again rib cage of the animal. This makes a wonderful, advanced taste soup. I had most of the ingredients on hand for this (I live in California and my lemon grass grows within the entrance yard) and fixed it for dinner tonight.
